Forwarder - cPanel → Forwarders → Add Forwarder. Enter the address and where mail should be delivered. Use Domain Forwarder to send everything for a domain to one mailbox.
Autoresponder - cPanel → Autoresponders → Add Autoresponder. Set the address, subject, message and whether it should reply to every message or only once per sender.
Remember to remove a temporary autoresponder when you are back - an out-of-office reply that never stops is a common complaint.
